Description
In the Corrego Das Pedras area the beans are taken to the patios where it is sorted by ripeness and maturity and being cleaned of any foreign matter. The coffee is then taken to the patio to dry for between 7-10 days where it is rotated and moved to ensure an even drying.
After it is dried the coffee is then left to rest for approximately 1- 2 weeks before being milled. This method has allowed the production of more fruity and prominent profiles from the usual profile we associate with Brazil natural coffee.
Corrego Das Pedras translates as 'Stream of stones' as there is a stream that runs through the farm. Corrego Das Pedras hasis a beautiful 240 Ha farm with 170 ha of coffee planted. It is located in the Carmo Da Cachoiera area of Sul de Minas. This area is known for its high quality production and more fruity cup profile.
